Wow it’s been a while since I posted… My computer stopped working for a bit and I got so busy doing stuff (making fluffy slime, science projects with C, spring cleaning, etc.) I forgot to update the website… Woops! I have pictures so I will post about most of the projects 🙂 The fluffy slime for instance was a huge hit!
I keep finding recipes that I want to make that require shredded chicken and I rarely remember to start some chicken cooking soon enough that it is ready to shred in time to still make the recipe.
So a few weeks ago I decided to cook a bunch of chicken breasts in the crock pot for just this purpose….
I filled up the crock pot with frozen chicken and seasoned with salt, pepper, cumin, garlic powder and bay leaves.
There are about 6 large frozen chicken breasts with 3 bay leaves, 2 TBSP salt, 2 TBSP cumin, 1 TBSP black pepper and 2 TSP black pepper and 1 cup water. I cooked for 9 hours on low and left it on the warm setting for a while until I was ready to finish.
I then put them in my mixing bowl and used the paddle attachment on low-speed for about 30 sec. to a minute to shred… SO fast…. I LOVE this shredding technique for meat.
I then put 2 cups of shredded meat into zipper bags to put in the freezer/fridge for future use.
One was some Salsa Verde Chicken Empanadas…So yummy!!
